My Favorite Cookie Recipe

I can’t even remember when I stumbled upon this recipe, but it is my go to when I need to bake. I love it because you can turn it into almost any kind of cookie that you want. It can be simple Chocolate Chip or it can be a cookie where you clean out all the opened bags of goodies from the cabinet.

Recipe

Ingredients

  • 1 cup butter, softened
  • 3/4 cup packed brown sugar
  • 1/4 cup white sugar
  • 1 (3.5 ounce) package of instant pudding mix
  • 1 teaspoon baking soda
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all purpose flour
  • 4 cups of goodies (chocolate chips, M&Ms, Reese’s Pieces, nuts, etc)

Directions

  1. Preheat oven to 350 degrees F
  2. In a mixing bowl, combine butters, sugars, dry instant pudding mix, baking soda, eggs and vanilla
  3. Add flour a 1/2 cup at a time until well blended
  4. Gradually add in the 4 cups of goodies
  5. Drop spoonfuls onto ungreased baking sheets
  6. Bake for 8 to 10 minutes or until the edges are starting to brown

Pudding Flavors

If you want to have some fun and experiment with the recipe, one of the easiest ways is by changing out the pudding flavor. I typically use Cheesecake, Vanilla or Chocolate, but I have also experimented with Lemon, Strawberry and Cookies & Cream. I regularly check out the pudding aisle in the grocery store to see if there are any new and different flavors.

Different Extracts

You can also substitute the vanilla extract for another flavor. When I made a lemon cookie recently, I swapped out the vanilla for lemon extract.

Different Goodies

I have used everything from different chips candies to sliced apples in these cookies. My new favorite go to if I don’t have an exact cookie combination in minds is Nestle Toll House Morsels & More Mixes. I recently used both the Chocolate Peanut Caramel mix and the Kitchen Sink mix in different cookies.

Usually I use one bag of morsels & more, which is about 2 cups and then add 2 cups of chips to finish off the recipe. I did find some other Morsels & More mixes on Amazon that I haven’t seen in store before. So keep an eye out on other options!

Parchment Paper

I absolutely love these Reynolds Baking Sheets. They make clean up easier. The cookies don’t burn down on the pans. I used to always burn the first sheet of cookies in the oven and these are a life saver.

Ice Cream Scoop

Everyone else may have known this one way before me, but an ice cream scoop works great for drop cookies. I can’t get my cookies to be similar size with a regular spoon and it’s still not perfect with an ice cream scoop, but it’s definitely easier.
